The grapes are harvested in September or October and then laid out on mats or in drying rooms. This process, known as appassimento , typically lasts about three months and results in the grapes having a higher sugar content and a greater concentration of aromas and tannins. After the grapes have dried, they are pressed and fermented, and the wine then matures for at least three years in oak barrels.
