Bonfanti produces its Amarone Reserve from a very careful selection of grapes, only in exceptional vintages. Under the right climatic conditions, optimal grapes with high natural acidity ripen, thus ensuring above-average aging potential. The production method is, of course, the same as for Amarone DOCG, with the exception of extended aging in oak, in this case for four years. This strengthens and enhances the typical organoleptic characteristics of Amarone. This wine is produced in very limited quantities and was only made in 2011 and 2015.
The color of Amarone della Valpolicella is an intense ruby red with garnet notes. It is spiced with aromas of tobacco and black pepper, with hints of cherry and dried fruit. Intensely fruity, with a pronounced aroma, soft, robust, warm, and powerful.

After careful hand-harvesting, the best grapes are dried for about three months in suitable climate-controlled and ventilated rooms. The grapes are then pressed, and the resulting must begins to ferment slowly on the skins for approximately 30 days. After racking, the wine is transferred to oak barrels, where it rests for at least the next four years. It then remains in the bottle for a further eight months to complete its maturation.
