Founded in 1884 by David Sarajishvili, it was the first producer to establish the classic brandy-making technology in Georgia. Sarajishvili's products are crafted from select, hand-picked grapes, including traditional varieties such as Tsiska, Tsolikauri, and Rkatsiteli. Here, grapes are chosen with the utmost care to guarantee the highest quality. The art of distillation is carried out using a French Charente still—the only one of its kind in Georgia—resulting in a particularly clear and harmonious flavor. After double distillation, the brandy matures for at least three years in 350-400 liter oak barrels, where it develops its luxurious aromas and acquires its complex character.
