The path to perfection – How La Valdôtaine distills
The quality of every distillate begins with the careful selection and storage of the raw materials. The pomace is stored airtight to prevent unwanted changes. This is followed by gentle distillation in traditional steam stills, each with a capacity of 400 kilograms. Over a period of four hours, the "heart" of the grappa is created drop by drop – the aromatic and flavorful highlight – while the unwanted components, such as the heads and tails, are rigorously removed.
For its particularly exquisite distillates, La Valdôtaine relies on a state-of-the-art vacuum still using the water bath method. This technique allows for gentle distillation at low temperatures, optimally preserving the delicate aromas and fragrances of the ingredients. The result is exceptionally aromatic spirits that delight the palate and the senses.
