The name "Tbilisuri" means "from Tbilisi," expressing the connection between the country's capital and the wines of this traditional region, even though the grapes are grown in Kakheti. In the glass, you'll find a pale straw yellow, already building anticipation for the wine experience.
The grapes for Marani Tbilisuri are carefully hand-harvested in September, optimally ripened, and then gently destemmed. To best preserve their freshness and fruity aromas, the grapes are cooled to 4-6 °C before being gently processed in a pneumatic press. The clear, settled juice then begins to ferment in stainless steel tanks, at precisely controlled temperatures of 15-18 °C. Once the perfect balance between sweetness and acidity is achieved, fermentation is stopped by cooling to maintain the wine's natural freshness and sweetness.
