The soil is shallow and consists mainly of clay with a good proportion of limestone, which gives it its reddish-brown color (Terra Rossa) due to iron oxides.

Harvest time and vinification

The grapes for the San Marzano Lamadoro Primitivo Puglia are carefully hand-harvested in the first weeks of September. Winemaking involves controlled maceration for approximately 10 days and alcoholic fermentation with selected yeasts.
