This unique wine is produced in the San Marzano, Salento, Puglia region, where the vineyards lie at an altitude of approximately 100 meters above sea level and benefit from high average temperatures and moderate rainfall. The clay soil, with a thin, rocky layer, imparts its characteristic flavor to the grapes.

The grapes for the San Marzano I Tratturi Rosato Salento are carefully hand-harvested in the second week of September. A portion of the grapes is gently cold-pressed, while the remainder is destemmed after 12-24 hours of skin contact. The resulting musts are then fermented in stainless steel tanks at 11°C with selected yeasts. The wine matures in stainless steel tanks to preserve its freshness and expressiveness.
