Manuelina Elicriso Moscato Provincia di Pavia IGT sweet semi-sparkling 2022

The Elicriso Moscato is best served well chilled as a fine dessert wine. The grapes, hand-harvested in the vineyards surrounding the winery, are gently pressed. The resulting free-run juice is transferred to temperature-controlled stainless steel tanks and cooled to extract the best aromatic compounds. This juice is then clarified. Alcoholic fermentation is initiated with selected yeasts and carried out at a controlled temperature. Fermentation is stopped to maintain the desired residual sugar level. The wine is then bottled. The natural bubbles are created through secondary fermentation in temperature-controlled stainless steel tanks. This secondary fermentation is initiated with selected yeasts. Finally, the wine is filtered, stabilized, and bottled.
