The Manuelina Ăchillius Bonarda dell'Oltrepo Pavese DOC Brut is a full-bodied red wine made from the Croatina grape with a delicate berry flavor. The grapes, hand-harvested in the vineyards surrounding the winery, are destemmed and crushed. The must ferments in contact with the skins at a controlled temperature for a period that varies from year to year. We use selected yeasts to initiate alcoholic fermentation. The skins are then removed by pressing. Fine tannins are added to enhance the wine's body and elegance. After fermentation, the wine is cooled to a low temperature and clarified. Natural bubbles are created through secondary fermentation in temperature-controlled stainless steel tanks. This secondary fermentation is initiated with selected yeasts. Finally, the wine is filtered, stabilized, and bottled.

Bonarda Piemontese is a red wine grape variety from Italy. It is cultivated in the Piedmont region and used there in DOC blends with Nebbiolo, as well as on its own as a table wine. Bonarda is included in the DOC wines Colli Piacentini, Colli di Parma (Emilia-Romagna) and Oltrepò Pavese (Lombardy).

The Bonarda Ăchillius adheres to the production rules of the Bonarda Project, which are stricter than those of the standard Bonarda DOC, and comes in a unique bottle. Developed by the Distretto del Vino di Qualità dell'Oltrepò Pavese, the project aims to promote a high-quality version of the most popular Oltrepò Pavese wine. We are very proud of this wine, and that is why it bears our family name.
