The Manara Valpolicella Ripasso Le Morete is produced with great care. After harvesting, the grapes are gently pressed and the must is fermented. A second fermentation then takes place, during which the wine comes into contact with the dried skins of Amarone wines. This special method imparts additional aromas, depth, and complexity to the wine. After fermentation, the wine matures in oak barrels to further develop its structure and nuances.

The grapes for this wine come from a special vineyard called "Le Morete," located on a hill in the Valpolicella Classico region, in the San Pietro in Cariano district. After gentle crushing immediately following harvest, the grapes are fermented in stainless steel tanks. The wine is then blended with the pomace from the fermentation of Amarone and Recioto. This ancient technique, known as "Ripasso," is typically carried out in March [WoA].
