Ingredients
- 250g Mafaldine pasta
- 400g ripe tomatoes, diced
- 2 cloves of garlic, finely chopped
- 1/4 cup extra virgin olive oil
- A handful of fresh basil, roughly chopped
- 150g fresh mozzarella, cut into cubes
- Salt and pepper to taste
- Optional: Parmesan cheese for serving.
preparation
- Cook the pasta in salted water until al dente, according to the package instructions. Then drain and set aside.
- Heat the olive oil in a large pan over medium heat. Add the chopped garlic and fry until lightly golden.
- Add the diced tomatoes to the pan and fry them for about 5-7 minutes, until they are soft and begin to break down. You can lightly crush them with a wooden spoon for a thicker sauce.
- Add the chopped basil and season the sauce with salt and pepper to taste.
- Add the cooked Mafaldine pasta to the pan with the tomato sauce and stir everything well so that the pasta can absorb the flavors.
- Finally, add the mozzarella cubes and stir gently until the mozzarella has melted slightly and is evenly distributed over the pasta.
- Serve the Mafaldine pasta immediately on plates, garnished with fresh basil and optionally some grated Parmesan cheese.
