The Giribaldi Dolcetto d'Alba Calùpo comes from the "Schiena del Crottino" vineyard in Rodello, situated 460 meters above sea level. The vineyard covers 4.85 hectares of hilly terrain with calcareous and rocky marl soil and a south-southwest exposure. The vineyard is planted exclusively with Dolcetto grapes from Italian clones. The training system is Guyot, with 5,000 vines per hectare.
The grapes undergo maceration for 9 days with several pump-overs throughout the day and temperature-controlled fermentation. After a rest in stainless steel, the wine matures in 30 hl oak barrels for approximately 2 months and then for at least 6 months in the bottle [WoA].
