The Bonfanti Valpolicella Ripasso Superiore red wine, from carefully cultivated vineyards, is aged in barriques. It is made from the Corvina, Corvinone, Rondinella, and Croatina grapes. Aging in oak barrels imparts an intense ruby-red color to the wine. Overall, it presents a beautiful bouquet with aromas of undergrowth and jam, as well as a dry, harmonious taste with good softness. This includes a pronounced intensity of tertiary aromas, such as jammy flavors and subtle spice notes. Soft tannins, medium acidity, a touch of sweetness, a full body, pronounced flavor intensity, and tertiary notes round out its flavor profile.

Valpolicella is added to the Amarone pomace at the end of January, when the Amarone is racked. This triggers a second fermentation, enriching the wine with alcohol, color, and distinctive aromas of sour cherries and jam. It then matures in Slavonian oak barrels for approximately 12 months, followed by another 6 months of bottle aging.
