Bindi Sergardi Mocenni 91 Cabernet Sauvignon Toscana Barrique IGT 2020

It is often said that numbers are not opinions, but facts. A first fact is the exclusive origin of this wine, made from Cabernet Sauvignon grapes grown in our vineyards on the Mocenni estate. A second fact is that this wine is an expression of its terroir, making it unique and distinctive compared to any other Cabernet Sauvignon.

• Colour : Deep garnet red. Incredibly intense bouquet with notes of coffee, hazelnut, incense and licorice.
• Aroma : An impressive tannin structure, suitable for long-term storage.
• Taste : It has a long, lingering finish. A good acidity is well-balanced with the tannins. This wine expresses the characteristic salinity and minerality of the soil in its own unique and distinctive way. An excellent example of Cabernet Sauvignon in the Chianti Classico region.

After a careful and precise selection of the grapes, the hand-harvested grapes are destemmed and gently pressed. Fermentation takes place in stainless steel tanks; maceration lasts approximately 20 days at a controlled temperature of 28-30°C. Shortly after alcoholic fermentation, the wine is transferred to French oak barriques, where malolactic fermentation occurs. After bottling, the wine remains in the cellar for further refinement before release. Aged for approximately 24 months in barriques.
