After a careful and precise selection of the grapes, the hand-harvested grapes are destemmed and gently pressed. Fermentation takes place in stainless steel tanks, and maceration lasts approximately 20 days at a controlled temperature of 28-30°C. Shortly after alcoholic fermentation, the wine is transferred to 42-hectoliter oak barrels, where malolactic fermentation occurs and the wine matures. After bottling, the wine remains at the winery for further refinement before release. This wine uniquely reflects the character of Mocenni and the Chianti Classico terroir. Aged for approximately 24 months in 42-hectoliter oak barrels.
