A tribute to Nicolò Casini – the essence of Tuscan tradition. This exceptional wine is a homage to Nicolò Casini, the spirit and heart of Bindi Sergardi. It is produced using an ancient Tuscan winemaking technique called "Governo".

A selection of high-quality grapes is laid out to dry. Meanwhile, other Sangiovese grapes are destemmed and gently pressed. The alcoholic fermentation, which lasts approximately 15 days, takes place in stainless steel tanks at controlled temperatures of around 25°C to enhance aromatic expression and preserve fruity and floral notes. Once drying is complete, the dried grapes are gently pressed, and the resulting must is added to the wine obtained during the first fermentation, initiating the second fermentation. This process is known as "Governo," an ancient Tuscan tradition. After clarification, the wine has completed malolactic fermentation and is aged at the I Colli estate before bottling.
