The Governo method, in which 10% of the Sangiovese grapes are dried and pressed in November, is a forgotten technique that gives this wine its unique character. The must is added to the already fermented wine, initiating malolactic fermentation. This results in a slightly increased alcohol concentration and imparts a delicate extract sweetness and remarkable freshness to the wine.
